Recipe - Fruit Filled Mini Pies

Heyhey again,
You may have noticed that I havent done any sewing for a while... I have projects ready to be put together but somehow the actual drive to sew is failing me right now. So I cook and bake instead... Not good for my waistline but oh so yummy!

Last month I pinned a lovely recipe for mini pies via Pinterest (which linked me to the Dollhouse Bake Shoppe). This idea was brilliant as the bf loves apple pie and I cant always be bothered to make an entire pie so this would be perfect. Plus I still had some cherry pie filling leftover from Valentine's Day so I could use that also. Not to worry, I baked these a few weeks back, the filling was still good back then. Imagine if I'd have waited this long? Yugh! LOL.

Anyway, back to the pies. They were so easy! All you need is a muffin tray, shortcrust pastry and pie filling (which I usually buy tinned if I need to make something quickly). I won't list the exact instructions here as the original post does that way better than I ever could, but I do have some pictures:

My pies all ready to go into the oven. I couldn't cover them fully as I just didnt have enough pastry but this sort of did the trick also.

So in absolutely no time at all I had 12 lovely mini pies waiting to be eaten on my counter :) They dont look quite as nice as the ones from the Dollhouse Bake Shoppe, but it's only my first time. Who knows, I may be able to get them all pretty next time ;)

Mmmm, very yummy. I chose the traditionally lattice top pies for myself (very cheeky), just because they were so cute!

I'm sure these are freezable also though I havent tried. They were just gone too quickly :)

  3. Yum! Great idea to use the muffin tin - and I like your solution for stretching the amount of crust - much prettier than a whole crust, anyway!
