Recipe - Moist Apple-Chocolate-Nut Gugelhupf

For years I have been wanting a Gugelhupf baking tin. For years it was on my list. For years the bf has been trying to get the exact one I want. And finally, last year I got it!! I was ecstatic! Of course then I didnt have a recipe or the time/energy/health to make a Gugelhupf but today was the day :) For those of you who dont know what a Gugelhupf is, it is a Bundt cake. No idea where that name came from but I guess I should Google it ;)

Anyway, the recipe for a 21.5cm tin (I have the Farringdon one) is as follows:
  • 250gr butter
  • 250gr icing sugar
  • 1tsp vanilla essence
  • 250gr all-purpose flour
  • 1tsp baking powder
  • 5 large eggs
  • 2 large apples
  • 100gr chopped nuts
  • 100gr chocolate chips
Mix the butter, icing sugar, and vanilla together until foamy.
Add the eggs one at a time while mixing
Peel, core, and grate the apples.
Add flour, baking powder, nuts and chocolate gradually to the egg mix.
Add the grated apples to the mix and mix until just blended.

Bake for one hour on about 200C. Dust with icing sugar when cooled.

And after all that, you will end up with a wonderfully moist and yummy cake like this:

So yummy, I already had 2 pieces for dessert ;)
