Recipe - Chicken on Rice

Am off to HYPER JAPAN in London Olympia today but wanted to share this recipe with you. I need to defrost my freezer and I still have a lot of meat in it... So this week I decided to finish a box of chicken legs and thighs and I needed a new recipe since my usual recipe is really winter food and they dont sell pre-cut soup mix vegetables at Tesco at the moment (how is that for being lazy!).

So after checking Allrecipes (my favourite recipe site), I came across this recipe:

You will need:
  • 2 cubes chicken bouillon
  • 1 tablespoon water
  • 1 cup uncooked white rice
  • 1/4 cup butter
  • 1 onion, chopped
  • 2 cups water
  • 6 chicken thighs
  • 1 teaspoon Italian-style seasoning
Instructions:
  1. Preheat oven to 350 degrees F (175 degrees C).
  2. Dissolve bouillon in 1 tablespoon boiling water.
  3. In a medium bowl combine the rice, butter/margarine, onion and 2 cups water. Mix well and pour mixture into a 9x13 inch baking dish.
  4. Place thighs on top of rice mixture and season to taste. Bake in the preheated oven for 35 to 45 minutes (depends on the size of the thighs).
I served this with roast vegetables and it was to die for! Quick and easy (great for after work) and sooo good!

  3. That sounds tasty and simple! I've never cooked rice like that in the oven - simple and less messy than on the stove top or rice cooker! I'll have to try!
